Nicolette Stevenson - Launched our new Pastry Arts program by teaching HRI 116 - Professional Pastry Techniques in the Fall 2008 Semester. She also teaches the follow-up course, HRI 118, Cakes, Decorating & Specialty Techniques.
One of Chef Stevenson's cakes is featured in Fall 2009 New Jersey Bride magazine.
Lauren Owens - Taught the HRI 103 Principles of Food Selection & Preparation course for the first time in the Fall 2008 semester and will be teaching it for the Spring 2010 term. Justin Bishop - Has been working for Sysco, the very large food distributor located in Jersey City, for a little over a year with the West side of New York as his territory. He was promoted in January of 2010 to an area ten times as large, all of Brooklyn and Staten Island. Congratulations! A great way to start the year.
Parag Vedawala is an HRI graduate from several years ago. He is a hotel major. I am very proud of Parag in receiving this distinguished honor.

MCC Alumnus of the Year 2006 Paul Avery Paul Avery is the Chief Operating Officer of Outback Steakhouses. He was honored in May as the Outstanding Alumnus of the Year. The MCC Alumnus of the year 2005 Tony Almeida Tony is the Director of Food and Nutrition & Environmental/Host Services at Robert Wood Johnson University Hospital in New Brunswick. He is credited with initiating the "Room Service" style of foodservice in this area. The patient calls and orders from a wide-ranging menu. Delivery is within 45 minutes and the quality is as good as any hotel! Tony also places many Dietetic Technology students in his care for field experience. He has been featured in many national trade magazines and is visited by people from all around the world who want to see how to do room service in a large hospital setting. We are proud of Tony and his accomplishments since he graduated from the HRI department in 1982.

international hospitality industry experience. Most recently,
Hughes served for 12 years as Vice President of Operations, Vice
President of Development and Vice President of Asset Management
for Carnival Hotels and Casinos of Miami, Florida. During this
time, he was responsible for the operations and asset management
of up to 40 hotels and resorts in the United States, Caribbean
and South America. Hughes also served as Managing Director of
Sales and Marketing for The Mariner Corporation of Texas.
Mariner owned and operated 30 Marriott and Hilton hotels across
the United States. In addition to his experiences in
multi-property leadership, Hughes was a hotel general manager
for Lincoln Hotels and the Mariner Corporation. Professor Hughes
is the co-founder and co-owner of Premiere Energy Services LLC
which provides energy consulting and contracting services to
commercial, educational and institutional clients. Additionally,
he provides hospitality consulting services to commercial real
estate investors through his firm, Hughes Hospitality Advisors
LLC, and he has served as a Court Appointed Receiver for the
